Amazing Mediterranean Potato Salad

A delightful twist on traditional potato salad featuring Mediterranean flavors and crispy turkey bacon.

Ingredients

  • 2 pounds potatoes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 6 slices turkey bacon, cooked and crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool. Cut into cubes.
  2. In a large bowl, combine the potatoes, cherry tomatoes, red onion, olives, parsley, and turkey bacon.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add additional vegetables such as cucumber or bell pepper.
  • This salad can be made a day in advance for even better flavor.
